right click on the person and BLOCK them..
How can i appear offline on GMAIL (google talk) to certain people when i'm actually online?
Do what the person above me said, or you can go to SETTINGS and add people in yer ignore/blocked list.
Note: If you block your contacts in Google Talk, they would not be even visible in yer contact list either. Hence, you too wouldn't be able to know when they're online - until you unblock them!
